Presentation of the Organic Tonka Bean harvested in Guyana - Max Daumin

This Organic Tonka Bean harvested in Guyana from Max Daumin is collected in the Amazon forest in Guyana (FR), the Tonka bean is a remarkable spice for desserts and pastries. This spice delivers flavors between almond and vanilla, enhanced with caramelized notes. She is surprising. In addition, our bean is made in France and certified organic by Ecocert. The Tonka bean is the seed of a tree: Dipteryx Odorata (or Kumaru, Coumarou or Brazilian Teak). It grows mainly in the Amazon (Brazil, Venezuela, Guyana, Suriname and Guyana). The tree, which can easily reach 20-30m, produces fruit resembling a small mango. Inside it is a seed: it is the Tonka bean. A few words on the choice of packaging: The carton is made and printed in Isère. This overpackaging, i.e. the 10 cartons in a box, represents 2/3 of an 80g A4 sheet. It allows you to fully preserve your spices without them deteriorating.

Max Daumin has always appreciated nature, plants and the use that we can make of them in terms of gastronomy! Naturally curious, he is constantly ready to explore new flavors, scents and aromas. Having inherited the passion for spices from his mother, born in Madagascar, Max decided to reproduce her use of it: always use a freshly ground spice for an explosion of flavors.

All the delicious aromas of spices fade and degrade quickly once ground, so Max Daumin had the idea of storing freshly ground spices in small cartons to preserve their delicious scents from light, air and humidity. humidity. Simply for taste: An independent sensory analysis demonstrates the taste superiority thanks to the carton compared to traditional packaging (glass jar, tinplate):

- for olfactory perceptions: + 56% at 2 months, + 72% at 6 months

- for taste perceptions of: + 44% at 2 months, + 59% at 6 months

Desserts and Pastries, Jams, Fish, Seafood, Sauce, Stews. It’s the spice of desserts. It is made to be combined particularly with chocolate and fruit-based desserts. It brings captivating notes to crème brûlées, custards, pastry creams and diffuses its fragrance easily in cakes. It can be considered as a substitute for vanilla. The tonka bean will enhance your seafood dishes: with shrimp, scallops or flat fish (Sole, Turbot, John Dory) it will express itself wonderfully for an enhanced and very balanced flavor with maritime notes. Like chocolate that can be added to beef bourguignon, it is very interesting to add to stews (pork, beef).
