This white and tender nut of great finesse has a unique, slightly sweet flavor. The rillettes are made exclusively with scallops, pecten-maximus , Normandy and Breton coasts.
In this “land and sea” combination, the smokiness of the bacon subtly enhances the sweetness of the scallops.
